Breakfast to beat Monday morning blues

Pizza Omelet

Pizza is an Italian food while omlette is a French one… but when they both come together it’s a sheer magic….  So Wear your chef caps and lets get going.

What do you need?

A few pieces of chicken, nicely chopped, 3 eggs, ½ oz of butter, 2 slices tomatoes

 1 Oz. thinly sliced mozzarella cheese, olives and capers for garnish,

Salt and pepper to taste.

 Do it Sasha Style…

Season and whisk eggs. Put butter in a pan, when warmed pour eggs and cook till just set (like a pan cake). In the mean time, shallow fry chicken till golden brown.

Arrange sliced tomatoes, olives, capers and the cheese and chicken pieces on top. Grill for few minutes, till cheese melts. Cut into wedges. Serve Immediately.

 They say…He who eats alone, chokes alone ! ! so call up your pals and share this finger licking yummy dish with them…

Saturday Love

Japanese Chicken Salad

 Hey folks, lets get you a Japanese High with this chicken salad. The taste will linger on all day and this one has an added benefit, its light and just right to keep you on your toes.  So let’s get going fellas…

 What do you need?

2 tbsp. sesame seed, slightly toasted, 11/2 cup slivered almond, toasted

2 cups cooked chicken, cubed, 3 oz. instant noodles

3 tbsp. spring onions, chopped, 1 small head of cabbage shredded

Dressing

1 instant noodle soup packet seasoning

11/2 cup salad oil, 3 tbsp. white vinegar, Little sugar

 Do it Sasha style…

Mix the sesame seeds and almonds with the cubed chicken and shredded cabbage. Next, pour the dressing over the salad and leave it in the refrigerator overnight. Then sprinkle 3oz. of the instant noodle (crumbled) on top with 3 tbsp. chopped spring onion, just before serving.

Its better, when served cold.

 Go dig in~

Friday Welcome

Chicken supreme marinated with herbs and a savoury salad

All you darlings there, whip up a Fancy Italian feast and give your senses a snazzy quick fix.

 What do you need?

4 potatoes, 2 onions, thinly sliced, 100 ml white wine or synthetic vinegar

1 tbsp sugar, 3 chicken breasts, 300g each , Salt and pepper to taste, 2 tbsp. olive oil,

8 fresh sage leaves (chopped), 2 tbsp. fresh rosemary (chopped), 6 lettuce leaves

 Do it sasha style …

First of all, place the potatoes with skins on in cold salted water and boil till tender. Drain, but do not refresh. Let the potatoes cool, then peel and slice. Once that’s done , set it a side.

Take a bowl and macerate the onions with the vinegar and sugar.Next cut each chicken breast into two, add salt , pepper and cover with a little oil.

Now press the chicken pieces into the herbs and cook with one tbsp. of oil over medium heat in a pan. Set aside and keep warm.

Arrange the lettuce leaves and potatoes on plates, add chicken and top it up with onions.

There you go… Treat yourself !!!

Risotto with shrimp

Risotto wih Shrimp

Flirt with your Thursday a bit and try this one out. I’m sure this will give your soaring mood an uplift.

 What do you need?

4 cups chicken soup

11/2 cups water, ½ cup dry white wine(optional), 1 broccoli cut into florets

1tbsp olive oil, 1 onion and 1 carrot, finely chopped

2 cups Arborio or Carnaroli rice or any short grain rice

½ kg shrimp, shelled and deveined

1 cup frozen peas, 2 tbsp parsley or ½ tbsp basil (tulsi)chopped, salt and pepper to taste

 

Do it sasha style…

Heat chicken soup, water and white wine in a saucepan and bring it to boiling high.

In the mean time, combine olive oil, onion, broccoli and carrot in a microwave safe bowl. Cook uncovered for some 3 minutes on High until all vegetables begin to soften.

Add rice and stir to coat with oil cook uncovered on High for 1 minute.

Stir hot soup into rice mixture. Cover the bowl with vented, plastic wrap it and cook in microwave for15 minutes on medium.

Next add shrimp and peas; cover and cook in microwave on High 3-4 mins.

Stir in lemon juice, parsley, salt and freshly ground black pepper.

Mid Week Get together

Walnut Crusted Chicken

Its official . Nuts are one of the best age defying foods. So lets celebrate the fact and indulge in a Walnut Delicacy.

What do you need?

Olive oil, enough to grease the grilling rack

½ Cup Breadcrumbs,Chilli powder, salt and pepper to taste,½  cup walnuts, toasted and cooled,¼ cup parsley leaves,1 egg white1tsp mustard sauce,½ kg Chicken Breast, thinly sliced

Do it Sasha Style

 Preheat oven to 230 degrees celsius and place a metal grilling rack inside a pan , slightly grease the pan and the rack with olive oil.Combine breadcrumbs, chilli powder, salt and freshly ground black pepper. Now blend walnuts and parsley in a mixie until finely chopped and then nicely toss with the breadcrumbs.

Take a bowl and whisk egg white and mustard sauce until blended.Next, dip one side of each cutlet in egg white, then into walnut mixture to coat the side  evenly.Now arrange the on the rack in pan keeping the coated side up, lightly grease with olive oil.

Bake chicken for some 10-12 minutes so that the top gets a golden look to it.

You can now enjoy it without any qualms because this one will take care of your stomach as well as your beauty needs.

Total Prep. Time : 25 mins

Beat Monday Blues with Eggs & Frankfurters

There is something about monday mornings, not wanting to get out bed, hoping there is a surpirse holiday, hoping that your boss is travelling and much more. But here is my reason why you will want to get out of bed and see the sun!

You will need:

Picture12 eggs (Fry or scramble)
3 Keells Frankfurter sausages, boiled, skinned, sliced
3 tablespoons butter
Seasonings to taste (Add chilli flakes to your list)

Do it Sasha Style

Boil Frankfurter sausages in water for about 4 minutes.
Remove sausages from water. Skin and slice them.
Saute them in Olive oil for about 4 min add chooped onions and salsa
Add mixed herbs (availible at all leading stores) for flavor along with salt & pepper
Fry the eggs set on plate
Add the Frankfurter
With a breakfast like this be assured there will be no blue through the day.

Dreamy Sunday CASSEROLE

Comfort food is a huge stress buster, life is fast pace these days and it is essential for us to treat our senses with a good breakfast. Sunday is perhaps the only day one indulges with a breakfast rest of the days its probably coffee/tea and toast.  So here is my pick, I have tried to keep it short as in time!

Its all about stylish cooking the smart way!

You will need

  • 1/4 c. chopped onion slightly browned
  • 1/4 c. chopped green pepper browned
  • 1 c= Keells Honey Glazed Chicken cubed ham
  • 1 c Keells Streaky Bacon
  • 1c Keells cheese &onion sausage
  • 1 c. grated cheese
  • 6 eggs
  • 1 c. milk
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 pkg (6 -10 pieces) frozen hash browns, thawed (the chunk kind not grated)

*C = Cup

Method:

Mix onion, green pepper, meat and cheese. Mix together eggs and milk. Add hash browns, salt and pepper. Mix all ingredients together. Pour into a buttered pan. Top with 1/4 cup more grated cheese (and sprinkle top with parsley flakes if desired). Bake 30 minutes until set at 350 degrees. Serves 6

Serve with Juice, eat it in bed ;)
