Potato Skins

According to a Spanish proverb, your belly rules your mind. So let your belly take the charge for a while and make new rules in the game of cooking…

What do you need?

10 small potatoes, Vegetable oil, Grated cheddar cheese

11/2 cup day old yogurt, salt and pepper to taste , 3 spring onions, chopped

Do it Sasha Style…

Bake full potatoes for 15- mins and then cut cooked potatoes into half and scoop out some of the inside, leaving little attached to the skin. Lightly brush both sides of the skin  (inside and outside) with oil. Grate cheese and sprinkle on potato.

Bake at 20c for 5 mins, until crisp and brown. To make sour Cream, hang day old yogurt for about an hour. Mix in chopped spring onions. Add seasonings. Serve potato skins with sour cream on the side. Optional Add grated Keells bacon bits to cheese before baking.
